Canelés are a Bordeaux pastry with deep roots in Aquitaine’s culinary heritage. Get them from three points of sale at the airport. This little cake with a caramelized exterior encloses a moist centre, flavoured with vanilla and a touch of rum. It takes its name from the fluted copper mould in which it is cooked. Our Company makes the traditional Canelé, the “Lunch” (medium size), the “Bouchée” (smaller) and our speciality: the “Canelé d’Or” with an intense vanilla flavour and very lightly flambéed with rum. The latest creation of the Baillardran company – the irresistible macaroon! Salted caramel, chocolate, vanilla, blackcurrant-violet…crispy on the outside and moist on the inside, it comes in a multitude of flavours.
